Faux Scones
As I continue to be resourceful but healthy and searching my cupboards for new and interesting foods to make. I came up with Faux Scones-Drop Style. I could probably never re-create this recipe but my freezer contained frozen egg whites (left over from making my Mom’s Spritz Cookies), evaporated milk, and some thin cake filling from a not so successful Cannoli Cake I made. Combined with a whole egg, baking powder, salt, whole wheat pastry flour, spice blend and of course dried red tart cherries my faux scones came out as not too sweet breakfast treat. Split and toasted with a little bit of butter made them extra delicious.
